Big Idea 2, #6, 32, 37. Carbohydrate, Saturated Fat, Unsaturated Fat. A carbohydrate is an organic compound occurring in food and tissue that can be broken down for energy. The potato is a starch, which is a big source of carbohydrates. A saturated fat is a fat made of triglycerides with only saturated fatty acids. Saturated fats are solids due to their molecular make up, and are present in butter. Unsaturated fat, on the other hand, is fat with a double bond in the fatty acid chain. This changes its shape, and makes it a liquid at room temperature. This type of fat can be found in canola oil.
