24) Hydrophobic- when a substance that does not interact well with water. These substances don't mix with water and instead repel it. This is a picture of olive oil. Lipids, like olive oil, and butter, are very hydrophobic substances. So are the waxy top of a leaf or the cell membrane (also made of lipids).
